Matured hop extract, also known as matured hop bitter acids (MHBA), originates from the female hop plant (Humulus lupulus L.) and is a crucial component of beer, contributing to its flavor and bitterness. These iso-α-acids undergo complex transformations into more elaborate bitter compounds during storage, providing a milder bitterness compared to the sharper taste of iso-α-acids. Alpha acids or “humulones”, undergo thermal isomerization during wort boiling, resulting in iso-alpha acids or “isohumulones” responsible for beer's bitterness. Beyond brewing, hops have applications in herbal teas and soft drinks and are used in herbal medicine for anxiety and sleep-related issues. Hops contain beta acids, essential oils with terpene hydrocarbons, and flavonoids, including xanthohumol. Notably, hops contain 8-prenylnaringenin, a potent phytoestrogen.
